Rose Shrimp Pasta

You can’t beat a good pasta fish to fill up the family on any day of the week. A couple of years ago, my wife said she was after some rose pasta. So I made rose pasta. This dish has a lovely tomato base filled with mozzarella and parmesan and finished off with cream to give a velvety smooth sauce that sticks really well to the pasta.

I love adding shrimp in to pasta dishes but you can substitute it with chicken or even just have this without any added protein. In fact, without the meat or shrimp, it makes this a very cheap family meal!

Ingredients

  • 400g pasta of your choice
  • 4 garlic cloves
  • 2 tbs olive oil
  • 2 mozzarella balls torn into small chunks
  • 150g parmesan
  • 20ml double (heavy) cream
  • 600g chopped tomatoes
  • 1 tsp chilli flakes or powder
  • 450g of uncooked shrimp
  • salt to season
  • parsley to garnish

Steps

In a pan of boiling water, add the pasta to cook for 12-15 minutes until tender

Slice up the garlic and add in to a frying pan along with the olive oil. cook for a couple of minutes until the garlic starts to brown

Add in the tomatoes followed by the chilli, mozzarella and parmesan. Cook until the cheese has melted (about 5-7 minutes)

Add in the shrimp and cook through until shrimp are ready

Stir in the double cream, season with salt, and serve with chopped parsley as a garnish
