My easy quesadillas

There are days when you just don’t know what to cook for dinner, or you’ve not planned ahead. Maybe your child has a friend coming home from school and you need to serve up a quick snack. Well luckily, this recipe uses items that you probably have around the kitchen anyway! Tortilla wraps are always a great way of making food interesting and by adding in some seasoned meat, cheese and vegetables, all in under ten minutes, you’ve got the perfect meal to solve your problems!

Ingredients
- 6 Tortilla wraps
- 1 pound (500g) Ground beef
- 1 taco seasoning packet
- 1/2 can sweetcorn
- 1 red pepper
- 250g grated cheese (I use a blend of cheddar and mozzarella)

Prepare all of the vegetables by dicing them up

Heat up a dash of oil in a frying pan and add the meat. Fry until cooked through then add the taco seasoning. Set aside

In a clean pan, add a small amount of olive oil and place in a tortilla

On one side of the tortilla, add the ground meat, vegetables and cheese. Fold the half that has no filling over to the other side so that all of the filling is contained

Cook for 3 minutes on one side, then flip and cook for another three minutes on the other side until the quesadilla is getting crispy. Enjoy!
